The Person Behind The Revolution
Let’s start with a little bit about me… My name is Nikki – I am a mum, a nutritionist and the ideas woman behind The Pantry Revolution.
My career in health started after I returned to Australia from living in the UK. I decided to become a mature age student and fulfil a lifelong desire to study nutrition.
“Tired of trying to cram her sparkly star-shaped self into society’s beige square holes, she chose to embrace her ridiculous awesomeness and shine like the freaking supernova she was meant to be.”
Five years later and two degrees (masters and a bachelor), I then set out on a crazy dog legged journey to where The Pantry Revolution came into fruition.
The dog legged journey involved volunteering in Kenya working on a nutrition program for malnourished pre-school children, a man, a baby, then a separation, and numerous town, and state house moves. Pheeww!
The Pantry Revolution was then born out of a desire to be able to go into a one stop shop to buy baked goods and condiments that were actually healthy, low carb and not full of sugar, gluten & preservatives.
This became more of necessity after my son was diagnosed with Type 1 Diabetes at age 3.
I really wanted to be able to easily find healthy foods and condiments that were low carb + low sugar. The more I thought about the concept, the more I asked myself, who would also really benefit from products like this? Having worked in my own nutrition practice I knew firsthand how difficult finding healthy gluten free + sugar free products for coeliacs & diabetics could be.
I am also a passionate foodie…. I LOVE FOOD!
I love to eat it, I love to cook and I love to find and experiment with new recipes and creating healthy meals for myself and my family. So to me The Pantry Revolution is really a marriage of my passion to cook and a passion to support others in their health journey. Who says baked goods and condiments can’t be deliciously healthy, unprocessed and not full of chemicals!
